Pin Gin & Tonic Pancakes – A Flipping Delicious Twist for Pancake Day!

Pancake Day is here, and this year, we’re shaking things up with a Pin Gin & Tonic Pancake recipe that’s as indulgent as it is refreshing! We’ve teamed up with Lincolnshire Private Chef, Kate Vickers, who has curated the perfect balance of zesty citrus, botanical notes, and fluffy goodness — all inspired by our signature Pin Gin.


We love a classic G&T, so why not bring those bright, crisp flavors into something equally delightful? The citrusy botanicals of Pin Gin, paired with the sharp freshness of tonic and a hint of sweetness, make for a unique pancake experience that’s light, zesty, and utterly irresistible.


The Recipe:


Makes: 10

Prep time: 5 mins

Cook time: 10 mins


You'll need:

100g plain flour 

2 large eggs

300ml milk

Oil 

250ml homemade Pin G&T

2 tbsp caster sugar

1 lemon 


Instructions:


  1. To make the syrup, make 2 Pin G&Ts around 250ml pour one into a saucepan (and drink the other one yourself) along with the sugar and lemon juice and reduce for a few mins until syrupy. Set aside.

  2. Put 100g plain flour, 2 large eggs, 300ml milk and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. Set aside for 30 minutes if you have time or until ready to use.

  3. Set a medium frying pan over medium heat and coat the pan with some oil. When hot, cook your pancakes for 1-2 minutes on each side until golden, not forgetting to flip them!

  4. Serve with lemon wedges, caster sugar and your gin and tonic syrup.


Kate's Top Tip - Have the oven on low and use to store pancakes as you cook more!
