Kathryn Laverack, the founder of Cocoa Encounters, is a distinguished chocolate educator, certified chocolate taster, and international chocolate judge. Her passion for fine chocolate is evident in her dedication to sharing its rich flavours and stories with others.

Our collaboration with Kathryn began with a shared vision of bringing together great food and gin — because what better pairing than chocolate? In February of last year, we hosted a Pin Gin and chocolate tasting event that offered participants a unique sensory experience, pairing exquisite chocolates with our signature gins.

Building on the success of our previous event, we are excited to announce another Pin Gin and chocolate tasting evening on April 11th 2025, at 7:00 PM, held at the Louth Distillery. Attendees will begin their journey with a refreshing Pin Gin & Tonic upon arrival, setting the tone for an unforgettable experience. Kathryn will then guide participants through the fascinating journey of chocolate, from bean to bar, revealing the craftsmanship behind every bite. Guests will savour four exquisite chocolates, each thoughtfully selected to pair perfectly with gins from our Pin Gin range.
